Bevel
The playing edge removes the blunt resistance of an unfinished thick pick. Its orientation matters, which is why many models are available in right and left-handed versions.
Why thick picks?
A thicker pick can sit more naturally between the fingers, reduce flex and give the player a clearer sense of where the tip is.
